In a city where dining experiences are constantly evolving, Carnival by Trèsind raises the bar once again. The celebrated restaurant launches its groundbreaking Carnival Experience Menu – a revolutionary approach to Modern Indian concept that transforms every meal into an immersive theatrical performance where food, culture, and creativity intersect.
Conceptualised by acclaimed Chef Sarfaraz Ahmed, the Carnival Experience Menu isn’t merely a menu refresh; it’s a complete reimagining of how Indian cuisine can tell stories, evoke emotions, and create lasting memories through the art of culinary theatre.
“I don’t just want to serve food. I want to tell a story with every plate — one that connects cultures, surprises the senses, and encourages our guests to play with their food again”, says Sarfaraz Ahmed,Corporate Chef, Passion F&B, as he describes the new experience menu. “A memory in the making — one where every dish is designed to provoke conversation, interaction, and delight, it’s Indian food as you’ve never experienced it before.”
The menu philosophy centers on “Edible Storytelling” – where each course unfolds like a theatrical act, complete with tableside preparations, interactive elements, and visual spectacles that blur the line between kitchen and stage.
Menu Highlights:
The journey begins with Carnival Bites, a whimsical introduction featuring Pani Puri Semifreddo, Bao Bhaji, Corn Chaat Pie-tee, and Aamras Achappam. It continues through dishes like Kala Khatta— a burrata salad with grapes and blueberry preserves inspired by the iconic Juhu beach — and Champaran Jackfruit Carnita or Champaran Style Carnitasa Bihari representation of soft tacos for vegetarians and non-vegetarians respectively.
Standouts from the new menu include the Indo-Thai Water Chestnut & King Oyster Mushroom Krapowor its seafood counterpart, Kanyakumari Crab Krapow, both served with vatayappam. The Parmesan & Saffron Khichdi, garnished with 24-carat gold leaf and served with olive pickle, is a signature dish that embodies the restaurant’s philosophy: rooted in nostalgia, elevated by innovation.
For non-vegetarian guests, dishes like Recado Negro — a Maharashtrian kaala mutton with koshambir salad and sourdough pao — bring intense, comforting flavors to the fore, while Kombdi Rassawith chicken dumplings adds regional depth.
The finale — Carnival Celebration, the restaurant’s signature dessert — is a theatrical, tableside showstopper, intended to create a multi-sensory celebration designed to leave guests with unforgettable memories.
The set menu is an eight course menu, available in both vegetarian and non-vegetarian preferences, and is designed to surprise, delight, and engage diners. Located in the heart of Juhu Mumbai, Carnival by Trèsind continues to push the boundaries of modern Indian cuisine, offering a tasting experience that’s as playful as it is precise.
